I recently received a great cookbook as an early Christmas present called 28 days of Clean Eating. It is fantastic, and this gem of a brownie recipe is in there! These brownies are so light and fluffy and almost cake-like.

Notes: The recipe calls for chopped pecans but I excluded them as my kids do not like nuts, though I bet they would bring these brownies to the next level.
I also did did not have a 9 inch square baking pan (I really need to get one!) so I used a 11″ x 7″ pan with success.
